Cheesy Quinoa Broccoli Bake Recipe
Who loves baking with quinoa? I do! That little seed is an amazing source of protein and great tasting too! I’ve found it can be used instead of pasta in some cases. Like my cheesy quinoa broccoli bake recipe for instance.
This is a dish that can easily be a Meatless Monday dish. I put chicken in it because hubby thinks something is missing without the meat, but it honestly tastes great either way!
Cheesy Quinoa Broccoli Bake Recipe:
- 1 1/2 cup of Quinoa
- 1 Large Chicken Breast
- 2 Tbs Coconut oil
- 2 Cloves Garlic
- 2 cups Broccoli
- 1/2 a Bell Pepper
- 1/2 Onion
- 2 Large Eggs
- 1 cup Milk
- 1 1/2 cup shredded Cheddar Cheese
- 1 tsp of the Real Salt Seasoning Salt (or any brand that lists all ingredients to avoid msg)
- 1 1/2 tsp Salt
- 1/2 tsp Black Pepper
- Red Pepper flakes
Rinse quinoa and cook according to package directions.
Thinly slice and cut chicken into small pieces, fry in coconut oil until done. Chop up broccoli, onion, pepper, and mince garlic. Once chicken is fried, toss the veggies into with the meat and coconut oil and lightly saute. (If fixing a meatless Monday dish, skip the chicken step and just saute the veggies)
Whisk eggs and add milk, cheese, seasoning salt, salt and black pepper.
Toss the cooked quinoa in with the meat and veggie mixture, then pour the egg mix in with the rest of the ingredients and mix well.
Pour everything into a 9×13 pan and sprinkle the red pepper flakes on top.
Bake at 350 for 30 minutes, allow to cool for 5 minutes before serving. Enjoy!
