Eggs Baked in Avocado
 
 
Ingredients
  • 1 Avocado
  • 2 Eggs
  • Fresh Herbs or Seasoning (Optional)
  • Sriracha (Optional)
Instructions
  1. Preheat oven to 425.
  2. Slice avocado in half and scoop out about 2 tablespoons of avocado from the center.
  3. Place avocado tightly inside a baking dish.
  4. Crack egg into each avocado half.
  5. Bake for 15 to 20 minutes, depending on the size of your eggs and avocados.
  6. Remove from oven and top with your choice of seasoning and hot sauce.
