Pesto Grilled Cheese Sandwiches
My family LOVES grilled cheese sandwiches, but I tend to get bored with them, so I am always looking for unique ways to make grilled cheese. Pesto Grilled Cheese sandwiches are a big favorite of mine. I love using my garden’s tomatoes and pesto made from the basil right out of my garden as well. These sandwiches are easy and even kid friendly. I wasn’t sure my son would eat these considering that they are covered in “yucky green pesto,” but he gobbled them right up! Enjoy!
Ingredients:
- Sandwich bread (I LOVE making these with the tomato-basil bread from Panera, but any gourmet sandwich bread will do).
- Pesto—try my homemade pesto recipe.
- 1 tomato (thinly sliced)
- Mozzarella cheese
- Butter
Directions:
Step 1. Spread butter evenly on the outside of each piece of bread and coat a small frying pan with non-stick spray.
Step 2. Spread pesto on the inside of each piece of bread.
Step 3. Place one piece of bread (pesto side up) in a frying pan and place sliced tomatoes and mozzarella on top of bread.
Step 4. Place other piece of bread (butter side up) on top.
Step 5. Grill sandwich until both sides of bread are toasted and cheese is melted. Serve immediately.
