Roasted Cauliflower Poppers Recipe

There are two things that are very important to me when it comes to my children: their health and their education. Back in May my partner at Simply Real Moms, Emily, and I went to Miami for the PBS Kids annual meeting and got an exclusive first look at an all-new series coming on October 7th called PEG + CAT. Can I just tell you that both Emily and I fell in love right away with the adorable and educational show. Finally there is a show out there that will not only teach our children mathematical problems, but teach them in a way that is extremely entertaining.

PEG + CAT follows the adorable, spirited Peg and her sidekick Cat as they embark on adventures and encounter problems that require them to use math and basic problem-solving skills in order to move forward. This is a great way to experience math through Peg and Cat’s relatable, and often hilarious, adventures.

So when I heard that PBS Kids and Whole Foods would be teaming up to help families to not only eat healthy but get kids excited to eat right, I was beyond excited. As an advocate for healthy eating, especially in children, I was eager to learn more. I am happy to announce that Whole Foods and PBS Kids will be offering free resources, including a suite of materials from PEG + CAT that will be available online and in Whole Foods Market locations across the country.

One of the best ways to teach children early math skills is at home in the kitchen, so we decided to do just that. First my kids and I went online to: http://pbskids.org/healthykids and found a list of delicious, kid-friendly recipes. Then we headed to our local Whole Foods Market to recreate some of these awesome recipes. My kids’ favorite was the Roasted Cauliflower Poppers.

Seriously? Kids, who choose cauliflower as their favorite? Now that is a parent’s dream come true! As we sat down for a delicious snack we decided to turn it into a fun and educational experience with my preschooler. Learning math should be fun and with the help of PEG + CAT and Whole Foods, it is now easy. Here’s a look into a fun way to teach your preschooler math through food:

Ingredients

  • 1 head cauliflower
  • 1 Tbsp. extra virgin olive oil
  • 1/2 tsp. chili powder, or more to taste
  • 1/4 tsp. ground cumin, or more to taste
  • 1/4 tsp. salt

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cut the cauliflower into florets. Toss them with the olive oil, chili powder, cumin and salt.

       3. Roast them on a baking sheet for 20-30 minutes until the florets are browned and soft, tossing once.
