31 Days of Halloween: Trick or Treaters’ Ghoul-ash

Last year, while watching The Chew, I saw a great recipe for goulash (or ghoul-ash for Halloween!) which I adapted a bit and have made a family favorite!

This is a tasty, hearty meal to feed your little ones before they go out for a night of trick-or-treating. Filling, delicious and a cinch to throw together, this will be one meal you’ll want to add to your rotation all fall and winter!

Ingredients:

  • ½ lb macaroni, cooked
  • 1 lb. ground turkey
  • 1 onion
  • olive oil
  • 2 cloves garlic, smashed through garlic press
  • 1 28-oz can diced tomatoes
  • 2 tablespoons tomato paste
  • ¼ cup Parmesan cheese
  • Red pepper chili flakes to taste
  • Salt to taste

Directions:
1. Heat a large pan over medium-high. Add olive oil. Brown turkey, onions and salt together. Add garlic.

2. Add tomato paste, canned tomatoes and chili flakes to taste.

3. Once cooked through, add pasta and a little pasta water to meat mixture. Taste and adjust salt/red pepper as needed.

4. Stir in Parmesan while still hot so it melts, and serve!
