Cinco De Mayo Appetizer: Mini Taco Dip Cups

Hosting a Cinco De Mayo party this year? Try these cute, individual-sized taco dips for an appetizer! These crowd-pleasers are perfect for kids, too! This recipe is fully adaptable, so feel free to change any ingredients to suit your preferences. Serve these up with fresh margaritas and you’ll have an instant party!

 

Ingredients: 

    • 1 (16 ounce) can refried beans
    • 1 package taco seasoning
    • 1 (8 ounce) container sour cream
    • 1 cup chunky salsa
    • 1 cup shredded Mexican blend cheese
    • 2 diced tomatoes
    • 1 (2.25 ounce) can of sliced green or black olives, drained
    • 1 (2.25 ounce) chopped jalapenos
    • A bunch of fresh cilantro
    • 9-ounce plastic tumblers
    • Tortilla chips

Directions:

Step 1. In a small bowl, mix the taco seasoning with the sour cream. Set aside.

Step 2. Place two tablespoons of each of the ingredients in this order from bottom to top:  beans, sour cream, salsa, tomatoes, olives, jalapenos and cheese in each cup.

Step 3. Garnish with a bit of cilantro and serve with tortilla chips.

*These would also be fantastic with an added layer of guacamole into the cups.  My family has avocado allergies so I didn’t include that, but if you want to add guacamole, check out Laurel’s guacamole’s dip recipe!
