The Best No-Fail Guacamole
Guacamole is probably one of my favorite things to eat. I can seriously eat it all day, every day. There’s no better way to celebrate Cinco de Mayo than with a yummy bowl of chips and guacamole. So invite your friends over, mix up a batch of margaritas and serve this fresh, flavorful guacamole and you won’t be able to tear yourself away from the bowl.
This specific recipe is one for those that like a little heat, but don’t worry, we have a more classic recipe added as well. The mild version is great for kids as avocados have a light, creamy texture. Plus, they are rich in vitamins B, E and K; and they have even more potassium than a banana! So grab a couple extra avocados and try my kid-friendly guacamole recipe while you’re whipping up the grownup batch.
Kid-Friendly (mild) Guacamole
Ingredients
- 3 avocados
- 1 clove garlic, finely chopped
- 1 tablespoon lime juice
- 1 tablespoon low-fat mayonnaise
- salt to taste
Instructions:
Whip all ingredients together with a fork until creamy and smooth. Spread desired amount onto half a tortilla and fold in half to create a triangle and serve. Or, add this spread to a quesadilla for an added flavor boost.
Baby Guac:
Babies who are starting to explore finger food can also enjoy their own version of guacamole. Mix chunks of avocado, black beans, corn and cheese. Make sure your beans and corn are cooked nice and soft so tiny gums and teeth can mash away!
