Oatmeal Banana Muffins

Every afternoon around 3pm my 11-month-old daughter is ready for a snack. This usually means yogurt or fruit—just something small to tide her over until dinner. However, when we’re out and about, I want to give her finger food rather than messy yogurt. I found myself resorting to baby snack bars, which are fine, but full of preservatives. So I decided to make my own take-along snack with healthy ingredients.
These healthy muffins are great for an afternoon snack, breakfast or any other time of day!
Ingredients
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- 1 cup rolled oats
- ½ cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 egg
- ¾ cup milk
- 1/3 cup unsweetened applesauce
- ½ tsp vanilla
- ½ tsp cinnamon
- 1 cup mashed bananas (about 2 bananas)
- ½ cup miniature semi-sweet chocolate chips (optional)
Directions
1. Preheat oven to 400 degrees and line 12-cup muffin tin with paper cups.
2. In a bowl, mix together flours, oats, sugar, baking powder, baking soda, salt and cinnamon.
3. In a separate bowl, combine egg, milk, applesauce, vanilla and bananas.
4. Add dry ingredients to wet and thoroughly mix. Stir in chocolate chips.
5. Fill muffin cups with batter (almost completely to the top).
Bake 15-18 minutes.
