Pizza on the Grill!
If you haven’t tried pizza on the grill before, this is the season to do it! Grilled pizza adds a rustic flavor to the crust that you’ll crave all summer long—it’s always one of the first things we eat every summer.
While this pizza can be made with homemade dough, I find it to be much easier with a store-bought, pre-made pizza crust. The crust is already baked, so you don’t have to worry about the dough sliding down the cracks of the grill.
Put any toppings you like on the pizza—we always do a half and half pizza since my husband and I like different toppings. This recipe will feature my side of the pizza since I personally think it is what tastes best! The recipe ingredients will cover a whole pizza (not just one-half).
Ingredients:
- 1 pre-made pizza crust (we like the whole grain pizza crust from Whole Foods)
- 3/4 cup pizza sauce
- 1/4 cup olive oil
- 1 cup crumbled goat cheese
- 1 cup shredded fresh spinach
- 1 cup chopped roasted red pepper
Directions:
Step 1. Preheat grill for high heat.
Step 2. Brush one side of pizza crust with olive oil. Place pizza crust on grill with oil-coated side down. Cook on high for two to three minutes or until bottom of crust looks crisp.
Step 3. While cooking, brush top of crust with olive oil. Reduce heat on grill to medium and flip pizza crust.
Step 4. Add pizza sauce, spinach and peppers; top with goat cheese. Cook on medium for five to six minutes or until ingredients are heated through and cheese is melted.
*If you think crust is cooking too fast and starts to look too brown on the bottom, reduce heat to low or place pizza on top grill rack to allow ingredients to cook.
