Eggs Baked in Avocado: Perfectly Healthy Breakfast
It’s not often that I can literally put two ingredients together and get an incredibly delicious, healthy and hearty meal. I have been obsessed with the idea of cooking an egg inside an avocado- after all, those two go so well together.
This breakfast is packed with omega-3s and high protein to start your day off right.
Eggs Baked in Avocado
Ingredients
- 1 Avocado
- 2 Eggs
- Fresh Herbs or Seasoning (Optional)
- Sriracha (Optional)
Instructions
- Preheat oven to 425.
- Slice avocado in half and scoop out about 2 tablespoons of avocado from the center.
- Place avocado tightly inside a baking dish.
- Crack egg into each avocado half.
- Bake for 15 to 20 minutes, depending on the size of your eggs and avocados.
- Remove from oven and top with your choice of seasoning and hot sauce.
