I got this recipe from a friend’s mom, and it is a family favorite! Kids will love helping construct the meatloaf “swirl” and the turkey and spinach make it a healthier option than traditional meatloaf. Serve with a side of corn and you have a meal! If you have leftovers, this recipe freezes beautifully. Pop it in the microwave for a few minutes and it’s just as good the second time around.

Ingredients

  • 1 lb. ground turkey
  • 1 cup dry Italian bread crumbs
  •  1/2 cup finely chopped onion
  • 3/4 tsp. dried oregano leaves
  • 1/2 tsp. salt
  • 2 tsp. Worcestershire sauce
  • 8 oz. tomato sauce
  • 1 egg, slightly beaten
  •  9 oz package frozen spinach, thawed, well drained
  • 3/4 cup shredded Monterey Jack cheese

Step 1: Preheat oven to 350.

Step 2: In large bowl, with your hands or wooden spoon, combine turkey, bread crumbs, onion, oregano, salt, Worcestershire sauce, tomato sauce and egg. Mix well.

Step 3: Spray large piece of foil with non-stick cooking spray. Shape turkey into an eight by 12-inch rectangle on foil. Place spinach evenly on top of turkey mixture; sprinkle with cheese.

 

Step 4: Using foil to lift meat, roll up tightly, starting at short end. Remove foil.

 

Step 5: Carefully place in baking pan, seam side down. Press gently to seal ends. Bake 1 hour or until turkey is browned.

Ready to bake!
