Healthy Sandwich Bread Recipe ~Simple!

Have you ever read the ingredient list on a loaf of bread? It’s ridiculous. Even the “healthy” breads have a list of ingredients a mile long! Well, not quite, but you get my point.  I looked and looked for a healthy sandwich bread in the stores, and by healthy I mean less than 10 ingredients at the very least! 🙂

I did find something that I was comfortable with; in the freezer section with a price tag I was NOT comfortable with!

Growing up I made bread a lot. But we put in ingredients like extra gluten, dried milk, and dough enhancer (don’t even ask what was in the dough enhancer!) I wanted bread that wasn’t going to call for a bunch of ingredients like that. I wanted simple and tasty.

So, that’s what I finally found. A simple, tasty and healthy sandwich bread recipe!

Healthy Sandwich Bread Recipe:

  • 3 cups milk
  • 1/2 cup honey
  • 2 tablespoon yeast
  • 2 egg
  • 4 teaspoons salt
  • 1 tablespoon wheat gluten
  • 1/2 cup melted butter
  • 9-10 cups of fresh ground whole wheat flour

Scald your milk. This is done by heating your milk to a temperature of 82 degrees, a little higher than that is fine but don’t heat past 100 degrees as you don’t want to kill the yeast.

Mix scalded milk, honey and yeast together. Stir until well mixed.

Add your eggs, salt,wheat gluten, butter, and 6 cups of flour. Mix well. Keep your mixer turned on and slowly add the remaining flour. Dough will still be sticky at this point.

I have a Bosch mixer and I put the lid on my mixer bowl and set the speed on low, then I allow the dough to knead for 10 minutes. I’m sure a Kitchen Aid mixer would do the same thing. I have no idea on hand kneading time. But I wouldn’t recommend due to the stickiness of the dough.

Once dough is done being kneaded, place the entire bowl in a warm area to rise for an hour. I like to use my Excalibur dehydrator for this part.

Once the dough has raised, put the bowl back on the mixer and beat the dough back down. Grease your counter top and your hands before pouring the dough out.  Grease 3 regular sized bread pans. Divide the dough into 3 loaves and place in pans.

Let raise until doubled then bake for 20-30 minutes in a preheated oven at 350.
